A New English classic, the whoopie pie the official state treat of Maine and is enjoyed throughout the U.S. Often referred to as a “Big Fat Oreo, or “BFO,” whoopie pies consist of two pieces of cake sandwiched together with a sweet, creamy filling. This treat is very popular during the autumn season!
Ingredients:
For Cakes
• 2 cups all-purpose flour
• ½ cup Dutch-process cocoa powder
• 1 ¼ teaspoons baking soda
• 1 teaspoon salt
• 1 cup well-shaken buttermilk
• 1 teaspoon vanilla
• 1 stick (1/2 cup) unsalted butter, softened
• 1 cup packed brown sugar
• 1 large egg
For Filling
• 1 stick (1/2 cup) unsalted butter, softened
• 1 1/3 cups confectioners sugar
• 2 cups marshmallow cream
• 1 teaspoon vanilla
Directions:
1. Preheat oven to 350 degrees F. Then, whisk together flour, cocoa, baking soda, and salt in a bowl until combined. Stir together buttermilk and vanilla in a small bowl.
2. Beat together butter and brown sugar in a large separate bowl with an electric mixer at medium-high speed, until pale and fluffy – 3 minutes in a standing mixer and 5 minutes with a handheld. Then, add egg and beat mixture until combined well. Next, reduce speed to low and alternately mix-in flour and buttermilk in batches, beginning and ending with flour.
3. Spoon ¼-cup mound of batter about 2-inches apart onto 2 large buttered baking sheets. Bake in upper and lower thirds of the oven and switch the position of sheets halfway through baking. Once completely baked, the tops will puff up and spring back when touched.
4. Make the filling by beating together butter, confectioners sugar, marshmallow cream, and vanilla in a bowl with an electric mixer at medium speed until smooth, about 3 minutes.
5. Assemble pies by spreading a tablespoon of filling on the flat side and top with remaining cakes!
