Spicy Orange Pork Salad
1 pound pork tenderloin
3 teaspoons Szechwan seasoning blend
1 tablespoon olive oil
2 oranges
1/2 cup bottled low-fat sesame-ginger dressing
1 cup seeded cucumber, chopped
1/4 cup cilantro, chopped
1 romaine lettuce heart, chopped
3 cups shredded coleslaw mix
1/3 cup wasabi-flavored almonds
Rub the Szechwan seasoning on the pork tenderloin. On a heated grill, cook tenderloin until the inside measures 170 degrees. Let rest for 15 minutes and then cut into 1/2-inch cubes. Peel and cube the oranges into chunks. Pour the salad dressing into a large bowl. Stir in orange cubes, cucumber, and cilantro. Let sit 10 minutes. Add the lettuce, coleslaw mix, and pork.
