Gone are the days when you could only find white button mushrooms at the supermarket. Now you can choose from Portabella, Crimini, Shiitake, Oyster, and more. But do you know how to cook with these varieties of mushrooms? Here is a great recipe to expand your mushroom culinary skills.
Oyster Mushroom Salad
4 tablespoons white wine vinegar
3 tablespoons olive oil
1 small shallot, minced
8 ounces fresh green beans
2 small heads of Belgian endive
6 ounces oyster mushrooms
Salt and pepper to taste
Whisk together the vinegar, olive oil, and shallots in a small bowl. Thinly slice the endive and add to the dressing. Toss and let stand for about ten minutes. Place the green beans into bowling water for 3-4 minutes until tender but still crisp. Remove the beans from the boiling water and place in a bowl of ice water to cool. In a skillet, heat a bit of olive oil and add the mushrooms. Season with salt and pepper and sauté for about five minutes. To serve, place a portion of the marinated endive in the middle of the plate. Top with several green beans and pour more of the dressing over the beans. Top with the mushrooms and serve immediately.
